Carboxypeptidase Y is a proteolytic enzyme that is synthesized by baker's yeast. It has been shown to be effective in the treatment of human serum and other fluids, as well as in the hydrolysis of peptides. Carboxypeptidase Y catalyzes the hydrolysis of peptide bonds with a proton at the carboxyl end of the amino acid chain. This enzyme is also able to hydrolyze amide bonds and has been shown to be effective in breaking down peptide hormones. The kinetic data for carboxypeptidase Y are determined by measuring its activity on a substrate molecule or on a series of substrate molecules with different concentrations.
